We present one of those coffees that holds a special place in our hearts: Finca Las Brisas from El Salvador, brought to us by Carlos Pola. Carlos places significant emphasis on innovation in his farming practices, which translates into exceptional harvest quality. This Catimor variety stands out with its vibrant cranberry acidity, followed by a sweetness reminiscent of cocoa. The coffee is full-bodied and syrupy, delivering a truly satisfying experience. Climate change and the coffee leaf rust pandemic (a fungal disease that devastated plantations in the region) forced Carlos to implement radical changes in his farming methods. Since 2012, the farm has undergone extensive renovation, embracing innovative agricultural practices. By planting coffee in double rows along contour lines, Carlos maximises the use of space and soil resources. Additionally, introducing nitrogen-fixing shade trees and fostering mycorrhiza (fungi that enhance nutrient exchange) have significantly reduced reliance on chemicals. These efforts have not only increased productivity but also elevated the coffee's quality, making its flavour even more captivating. Finca Las Brisas employs techniques designed to decrease water waste while enhancing quality. During wet processing, water is carefully recovered at every stage. After treatment with enzymes and biodigesters, it undergoes anaerobic fermentation to separate sugars. Then, water is aerated to restore its original properties. This meticulous approach highlights Carlos’s forward-thinking mindset, demonstrating how he skilfully balances environmental responsibility with innovative practices to adapt to modern challenges.
